Olive oil spray
1 tablespoon olive oil
2 rashers bacon, chopped
1 small red onion, finely chopped
1/4 cup each: sour cream, grated tasty cheese
salt and freshly ground black pepper
1/2 cup extra grated tasty cheese
1/4 cup fresh breadcrumbs
1/2 teaspoon ground paprika
Preheat the oven to 180ºC. Cut the kumara in half lengthwise. Place, cut side up, on a baking dish lined with baking paper. Spray the kumara with oil spray and bake them in the preheated oven for 40-45 minutes, or until tender.
While the kumara are cooking, heat the oil in a frying pan over a medium heat. Add the bacon and red onion and cook for 4-5 minutes. Remove from the heat and set aside.
Once the cooked kumara is cool enough to handle, scoop the flesh into a bowl, leaving the skin intact. Mash the kumara flesh with a fork, then add the bacon and onion, sour cream and cheese. Season to taste with salt and freshly ground black pepper. Spoon the mixture into the kumara skin shells.
Combine the extra cheese, breadcrumbs and paprika. Sprinkle the mixture over the top of the kumara filling. Spray lightly with oil spray.
Bake in the preheated oven for 20-25 minutes, or until golden.
