400g sausage meat
400g prime beef mince
1/2 onion, peeled and finely diced
1 teaspoon crushed garlic
1 egg, beaten
1 tablespoon each: dried breadcrumbs, chopped parsley
1 1/2 cups cooked mashed golden kumara
salt and freshly ground black pepper
1/4 cup grated tasty cheese
Preheat the oven to 180ºC and line 4 mini loaf pans with baking paper. In a large bowl, combine the sausage meat, mince, onion, garlic, egg, breadcrumbs, parsley and half a cup of the mashed kumara. Mix to combine well and season to taste.
Divide the sausage mixture between the four loaf pans and pack it in firmly, smoothing the top. Place the tins on a solid baking tray and bake in the preheated oven for 20 minutes.
Remove the pans from the oven and use a quarter of the remaining kumara to top each meatloaf. Sprinkle over the cheese and cook for a further 5-10 minutes until golden. Serve with a green salad and some tomato sauce.
Makes 4 mini meatloaves.
