Chocolate Kūmara Pudding
Ingredients
1 cup cooked kūmara (red, orange or gold)
115 grams reduced fat cream cheese
1/2 cup low-fat vanilla yogurt
1/4 cup brown sugar
1/2 cup chocolate syrup
Method
Combine all ingredients in blender or food processor.
Blend until very smooth and creamy.
Makes 4 servings. Healthy food that doesn't taste like it!
Kūmara Banana Pudding
Ingredients
2 cups mashed cooked kūmara (red, orange or gold)
1 cup mashed banana
2 eggs
1/3 cup light brown sugar
1/4 cup melted butter
1/2 cup milk
1/2 cup sour cream
1 tbsp grated orange rind
1/2 cup orange juice
1/4 tsp salt
1/2 tsp mixed spice
Method
Combine kūmara, bananas, sugar, butter, milk, sour cream, orange rind, orange juice, salt, mixed spice and egg yolks. Beat egg whites until stiff and fold into kūmara mixture. Pour into greased baking dish and bake 175°C for 1-1/4 hours.
Kool Kūmara Muffins
Ingredients
1 cup cooked mashed kūmara (red, orange or gold)
1-1/2 cup flour
2-1/4 tsp baking powder
3/4 tsp salt
1 cup sugar
2/3 tsp cinnamon
2 large eggs
3/4 cup vegetable oil
1/2 cup chopped walnuts or pecans
1/2 cup raisins
Method
Preheat oven to 180°C. In a large bowl, combine kumara, flour, sugar, cinnamon and salt. Add eggs and oil. Blend well. Stir in nuts and raisins. Pour batter into greased muffin cups until 3/4 full. Bake for 15 minutes or until tops are springy. Remove from pan and serve warm. Makes about 18 muffins. Yum!
Yummy Kool Kūmara Cookies
Ingredients
1 cup cooked kūmara (red, orange or gold)
115 grams reduced fat cream cheese
1/2 cup low-fat vanilla yogurt
