700 grams peeled kumara
2 cloves of garlic crushed
3 slices of bacon, chopped finely
1/2 Red onion chopped finely
2 tbsp chopped parsley
1/2 Cup black olives, chopped
1 egg
1 tbsp flour
2 tbsp’s oil
pepper and salt to taste
1 cup of breadcrumbsCook kumara in boiling water until soft, drain and mash. Fry onion, bacon and garlic in one tbsp of oil on medium heat so as not to burn garlic.
Add bacon mixture to mashed kumara with all other ingredients except breadcrumbs and mix well.
Take large spoonfuls of the mixture and roll in breadcrumbs into log-shaped croquettes. Place in the fridge to cool for an hour. Fry the croquettes in oil, turning them frequently until they are golden brown.
Serve with your favourite garden salad. Bon appetite.
