karl's kumara cakes
served with homemade sweet and sour chilli
sauce
4kg fresh fish, finely sliced
1 cup flat parsley, chopped
1 cup baby spring onions, sliced
3 lemons, finely zested
7 cups spelt flour
7 tspns baking powder
salt & pepper
20 eggs
10 cups milk
8 oven baked & mashed kumara (with skins on)
Place fish, parsley, baby spring
onions & lemons in a dish.
In another bowl combine flour, baking powder, salt, pepper,
eggs, milk & kumara. Fold in the fish mixture and cook
cakes in a hot non-stick pan or 3! Serve with homemade sweet
and sour chilli sauce.
homemade sweet and sour
chilli sauce:
1 cup apple concentrate
1 cup water
1 tspn paprika
4 tblspn tamari
2 tspn chilli paste
2 tblspn apple cider vinegar
2 cloves garlic, crushed
2 kaffir lime leaves
1-2 tbspn cornflour
8 tomatoes (deseeded), finely diced
10 spring onions, finely sliced
3 lemons, zested & juiced
2 tblspn olive oil
2 tblspn flaxseed oil
salt & pepper
Boil gently the apple, water, paprika, tamari, chilli paste,
apple cider vinegar, garlic & kaffir lime leaves. Add
the cornflour mixed in water till smooth. Reboil and turn
off. Stir through the spring onions, lemons, olive oil, flaxseed
oil, salt & pepper.
