These recipes can be used with any variety of Kaipara Kumara...red, orange or gold. All Kaipara Kumara cook the same. It’s the colour combinations and different delicious tastes you will enjoy.

zesty salsa

• 2 cups diced cooked kumara
• 1 can whole kernel corn, drained
• 1/2 red pepper, diced
• 1 fresh jalapeno pepper, seeded & chopped
• 2 tbsp chopped fresh coriander
• 1 clove garlic, minced
• 2 tbsp fresh lime juice
• salt & pepper to taste

In medium bowl, combine all ingredients. Blend well. Cover and chill at least 30 minutes to blend flavours.

Serve as a dip with corn chips or as a nacho topping.
