great tasting kaipara kumara

These recipes can be used with any variety of Kaipara Kumara...red, orange or gold. All Kaipara Kumara cook the same. It’s the colour combinations and different delicious tastes you will enjoy.

sweet & sour vegetables

3 tbsp olive oil
4 cloves garlic, peeled
2 Red Capsicums, sliced
2 Golden Capsicums, sliced
1 Kumara, peeled and sliced
2 Red Onions, peeled and quartered
6 Roma (Acid Free) Tomatoes, halved and seeded
1 pkt McCormick Produce Partner Honey Sesame Carrots
4 tbsp balsamic vinegar

Heat oil in a large heavy frying pan and saute the garlic, capsicums, kumara and onions for 5 mins.
Add the tomatoes to the pan and combine the packet contents and balsamic vinegar and pour into the pan and simmer 15 mins.
Use sweet and sour vegetables on pizza, foccacia or as a condiment for meat or fish.

Note: Use winter vegetables in place of capsicum. Try adding a few raisins or pine nuts for something different.

Serves 6 Prep time 5 mins. Cooking time 25 minutes.
