great tasting kaipara kumara

These recipes can be used with any variety of Kaipara Kumara...red, orange or gold. All Kaipara Kumara cook the same. It’s the colour combinations and different delicious tastes you will enjoy.

sweet chilli-glazed red kumara

1kg Kaipara Red Kumara
1⁄4 cup runny honey
1⁄4 cup sweet chilli sauce
2 tablespoons extra virgin olive oil
1 teaspoon fennel seeds
salt and freshly ground black pepper
small handful of flat-leaf parsley, stalks removed

Preheat the oven to 180°C. Slice the kumara into 1⁄2cm rounds. Place them into a roasting dish lined with baking paper.

Combine the honey, sweet chilli sauce, extra virgin olive oil and fennel seeds in a bowl. Pour the the mixture over the kumara rounds and toss until they are until evenly coated. Season with freshly milled black pepper and salt.

Roast the rounds for 35-40 minutes in the oven, turning occasionally until the kumara is soft and the glaze has caramelised.

Toss through the parsley leaves and serve piping hot as a side dish.

Serves 4.
