These recipes can be used with any variety of Kaipara Kumara...red,
orange or gold. All Kaipara Kumara cook the same. Its the colour
combinations and different delicious tastes you will enjoy.

A simple and elegant accompaniment. Note the lower cooking temperature
for this stir-fry.
2 tbsp oil
3 medium kumara, scrubbed and cut into 1 cm slices (750g)
2 large carrots, unpeeled, cut into 1cm slices
2 cloves garlic, peeled and finely sliced
Honey Sauce:
2 tbsp honey
2 tbsp vinegar
1 tbsp oil
1 tbsp finely grated fresh ginger
Heat the oil in a pan or wok. Add the kumara, carrot and garlic.
Sautι over a medium heat for 10-12 minutes or until the kumara
is golden brown and tender. Transfer to a serving dish. Gently
warm the honey dressing ingredients, pour over the vegetables.
