These recipes can be used with any variety of Kaipara Kumara...red, orange or gold. All Kaipara Kumara cook the same. It’s the colour combinations and different delicious tastes you will enjoy.

kumara mash provencal

4-5 large gold kumara, peeled
1/3 cup sun-dried tomatoes, sliced
1 tblspn olive oil (can use oil from sun-dried tomatoes)
1 spring onion, chopped
1/4 cup sliced black kalamata olives
salt & ground black pepper

Cook kumara in boiling salted water until tender. Drain & mash.
Mix in the sun-dried tomatoes, oil, spring onion & olives. Season with salt & pepper.
Serves 4
