great tasting kaipara kumara

These recipes can be used with any variety of Kaipara Kumara...red,
orange or gold. All Kaipara Kumara cook the same. It's the colour
combinations and different delicious tastes you will enjoy.
caramelised onion &
kumara mash
This combination of smooth and creamy kumara with succulent
onions is totally mouthwatering! Try these onions over other
vegetables, or use about four or five onions, don't cut them
so finely, cook them the same way and serve on-the-side by
themselves ... delicious.
1 large onion, peeled and finely chopped
2 cloves garlic, peeled and finely chopped
2 Tbsp olive oil
4 large kumara (900g)
1/4 cup light sour cream
1/4 - 1/2 cup milk
freshly ground black pepper
Place the onion, garlic and oil in a saucepan. Cover and simmer
on a very low heat for 25-35 minutes or until the onions are
succulent and caramelized. Peel the kumara and cut into even
sized pieces. Cover and boil in a little water for 25-35 minutes
or until soft. Drain the kumara. Add sour cream and milk,
mash to a smooth consistency adding more milk if necessary.
Add the onion and juices. Mix well. Season with pepper.
