These recipes can be used with any variety of Kaipara Kumara...red, orange or gold. All Kaipara Kumara cook the same. It’s the colour combinations and different delicious tastes you will enjoy.

kumara baked with apples

2 large kumara, peeled and cut into 2-3cm cubes
4 apples, peeled, cored and sliced
2tbsp brown sugar
3tbsp butter
1tbsp chopped parsley
1 orange and 1 grapefruit zest

1. Preheat the oven to 190oC.
2. Mix the kumara, apple and sugar.
3. Butter a baking dish and put the kumara mixture into it.
4. Dot with any remaining butter.
5. Cover and bake for 40 minutes.
6. Uncover and sprinkle with chopped parsley, and orange and grapefruit zest.

Preparation Time: 20 min
Cooking Time: 40 min
Chef's Tip: Serves 4. Serve with roast pork or chicken.
Wine Match: Chardonnay
