These recipes can be used with any variety of Kaipara Kumara...red, orange or gold. All Kaipara Kumara cook the same. It’s the colour combinations and different delicious tastes you will enjoy.

kumara bake

2 large kumara - approx 600g
50g butter
1 cup milk
nutmeg
salt & pepper
1/2 cup gruyere cheese, grated

Peel and slice the kumara thinly. Butter a baking dish generously. Layer the kumara slices in the dish. Scald the milk and add nutmeg, salt and pepper and butter to melt. Pour over the kumara. Sprinkle with the cheese. Bake in a moderate oven 20 - 30 minutes or until tender and golden on top. Serves 4.

This is a great addition to any meal - or serve with a crisp salad for lunch!
