kumara
& bacon
The flavour combination of bacon and kumara is sensational
- you are bound to enjoy it. You can use this technique with
different ingredients - even changing the leaf base can make
you feel like you have created a completely different salad.
2 gold kumara, cut into very thin slices
2 rashers bacon, finely chopped
olive oil for spraying
1/4 cup pinenuts
1 avocado, sliced
5 handfuls green leafed lettuce
2-3 Tbsp vinaigrette e.g. lemon
Place the kumara on an oven tray. Spray with olive oil. Bake
at 200°C for 15-20 minutes. Add the pinenuts and bacon,
bake another 3 minutes. Allow to slightly cool on a serving
platter and add the rest of the ingredients. Toss the vinaigrette
through the salad.
Serves 4.
