These recipes can be used with any variety of Kaipara Kumara...red, orange or gold. All Kaipara Kumara cook the same. It’s the colour combinations and different delicious tastes you will enjoy.

kumara & bacon

The flavour combination of bacon and kumara is sensational - you are bound to enjoy it. You can use this technique with different ingredients - even changing the leaf base can make you feel like you have created a completely different salad.

2 gold kumara, cut into very thin slices
2 rashers bacon, finely chopped
olive oil for spraying
1/4 cup pinenuts
1 avocado, sliced
5 handfuls green leafed lettuce
2-3 Tbsp vinaigrette e.g. lemon


Place the kumara on an oven tray. Spray with olive oil. Bake at 200°C for 15-20 minutes. Add the pinenuts and bacon, bake another 3 minutes. Allow to slightly cool on a serving platter and add the rest of the ingredients. Toss the vinaigrette through the salad.
Serves 4.
