pie and pudding recipes using kumara

Try these mouthwatering recipes for bakes, pies
and puddings. Kumara makes a tasty, healthy base...and an excellent
alternative to traditional pastry.
kumara pie
2 cups mashed cooked kumara
1/4 cup sugar
1/2 cup brown sugar
1 tsp salt
1/2 tsp ginger
1/4 tsp cloves
dash pumpkin pie spice (optional)
3 eggs, well beaten
1 cube melted butter or margarine
1 cup of evaporated milk
1/2 cup of water
Combine the first 9 ingredients. Melt butter in milk. Gradually pour
into kumara mixture, stirring. Beat gently with rotary beater until
well blended and smooth. Turn into pastry lined 23 cm pie plate. Bake
in hot oven 200°C for 15 minutes; reduce heat to 175°C and
bake 30 minutes longer or until a knife inserted in centre comes out
clean. After pie has been baking for 15 minutes you can add 1/4 cup
finely chopped nuts sprinkled on top or minature marshmallows. |
