Chocolate Kool Kumara Pudding Surprise

1 cup cooked kumara (red, orange or gold) 115 grams reduced fat cream cheese (not non-fat) 1/2 cup low-fat vanilla yogurt 1/4 cup brown sugar 1/2 cup chocolate syrup How to make Combine all ingredients in blender or food processor. Kool Kumara Banana Pudding
Things you will need
2 cups mashed cooked kumara (red, orange or gold) 1 cup mashed banana 2 eggs 1/3 cup light brown sugar 1/4 cup melted butter 1/2 cup milk 1/2 cup sour cream 1 tbsp grated orange rind 1/2 cup orange juice 1/4 tsp salt 1/2 tsp mixed spice How to make Combine kumara, bananas, sugar, butter, milk, sour cream, orange rind, orange juice, salt, mixed spice and egg yolks. Beat egg whites until stiff and fold into kumara mixture. Pour into greased baking dish and bake 175°C for 1-1/4 hours. Serve with whipped cream if desired. |
Yummy Kool Kumara Cookies
Things you will need
1 cup butter 2 tsp vanilla 1-1/2 cups sugar 2 cups mashed cooked kumara (red, orange or gold) 1 tsp salt 2 beaten eggs 1/2 cup chopped raisins 4 tsp baking powder 1 tsp cinnamon 2 cups flour 1/2 cup chopped nuts How to make Cream butter and sugar. Add eggs one at a time and beat well. Stir in mashed kumara and vanilla. Stir in sifted dry ingredients and combine with nuts and raisins. Add to the kumara mixture. Drop in tiny spoonfuls onto a cold greased tray. Bake at 110°C for 20 minutes. |
Smashing Orange Kool Kumara Smoothie
Things you need
1 cup cooked kumara (red, orange or gold) 3 cups orange juice 1/2 cup low-fat vanilla yogurt 1 Tblspn whipped cream 2 tsp vanilla extract 3 tsp low-calorie sugar substitute How to make Pour 2 cups of orange juice into blender; reserve the other cup of orange juice. Add remaining ingredients to blender and whip until smooth and frothy. Pour into pitcher; add the reserve juice and stir. Serve immediately. Makes 6 servings. Super! |
Mouth Watering Kool Kumara Muffins
Things you will need
1 cup cooked mashed kumara (red, orange or gold) 1-1/2 cup flour 2-1/4 tsp baking powder 3/4 tsp salt 1 cup sugar 2/3 tsp cinnamon 2 large eggs 3/4 cup vegetable oil 1/2 cup chopped walnuts or pecans 1/2 cup raisins How to make Preheat oven to 180°C. In a large bowl, combine kumara, flour, sugar, cinnamon and salt. Add eggs and oil. Blend well. Stir in nuts and raisins. Pour batter into greased muffin cups until 3/4 full. Bake for 15 minutes or until tops are springy. Remove from pan and serve warm. Makes about 18 muffins. Yum! |
